Dragon Graduation Cake

When the 2012 school year was coming to an end, I was asked to make a Graduation Cake. The recipient was graduating from Kubaski High School in Okinawa, Japan. The mascot for Kubaski is a Dragon.

The client wanted there to be a mortar board, graduation cap, on top of the cake. The school colors of black, green, and white were also represented. The cake was Marble Cake with Vanilla Buttercream. The bottom of the graduation cap is marble cake mixed with frosting and formed in a bowl. It was then covered in Fondant.

I then piped on the school logo with a dragon. Along the sides of the cake was a congratulations message for the student.

I am really pleased with how this turned out. It was my second chance at making a graduation cap and this time it went better than the first. Practice makes perfect!
