I got to do some cheesecake making not to long ago!
I was approached by a client to make a small 8 in. cheesecake. Per request, I made Mint Cheesecake. The crust was ground up Grasshopper Cookies. They are a chocolate cookie with a minty flavor, similar to Thin Mints (girl scouts). The base of the cheesecake was cream cheese, sour cream, and sugar. I then added some Creme de Menthe and mint extract for the flavor and color. To finish it off I piped on some Whipped Cream topping and the garnished it with some cookie segments.
