Green Tea Chiffon Cake

So, here is something a little different: Green Tea as an ingredient in a baked good!


I was approached by a client to make a special “thank you” gift for his friends wife. She is of Japanese heritage so I wanted to make something she would appreciate. So, I made some Green Tea Chiffon Cake. I made it using Matcha, or Green Tea powder I found at a local store. Chiffon cake is similar to an angel food cake, in that is uses whipped egg whites to great a light and airy texture.


This cake was a challenge. Whipping egg whites to “stiff peaks” is harder than it sounds! But it was fun to experiment with a new ingredient. The green tea has a strong flavor and it is very present in this cake. I topped it off with a light dusting of powdered sugar to balance the sweet and savory flavors.
