So, I wanted to make a new dessert to bring to a party. I wanted something easy, and grab-and-go, and also tasty. It was also for an Easter party, so I wanted something Easter-y. I always associate Easter with carrots, so then I thought carrot cake! But, that’s not very “grab-n-go” so then I thought, why not make it into a cookie?
I researched a few recipes, experimented, taste-tested, and viola! Carrot Cake Cookies! These cookies are packed full of carrots and raisins! They also get a little spice from ginger and nutmeg. The texture is more cake-like and chewy. To take them to the next level, they are topped off with a powdered sugar glaze!
They taste wonderful! Spicy, moist, sweet….It’s a carrot cake in cookie form!
